Cauliflower schnitzel and sweet potato fries

1 pk cauliflower 2 pk egg 3 tbsp plain flour 5 tbsp breadcrumbs pk salt

Fried cauliflower in a slightly different form, but a very beautiful one.

Small, firm cauliflower is suitable for cauliflower noodles. Clean the cauliflower and cut crosswise into slices about 1,5 cm thick. Do not cut off more than 2-3 slices from one head, the rest of the cauliflower should be cut into florets and fried or used for soup.

Clean the sweet potatoes, cut into fries, sprinkle with herbs (oregano, marjoram, parsley…), drizzle with oil and salt.

Coat the cauliflower in the triple layer and fry. I “fry” on a baking sheet.

Place the sweet potato fries and cauliflower on a baking tray, on baking paper and place in a preheated oven to bake, at 200°C for about 40 minutes. During baking, turn once and drizzle with oil. The baking time is shorter when the cauliflower florets are spread out on the baking sheet. The fries bake for about 30 minutes, so take them out earlier and roast the cauliflower for about 10 minutes more until golden.

Serve with vegetable salad and dressing (sour cream, garlic, salt, MCC).
