Casserole recipe with corn tortillas
This casserole is perfect for a potluck or family dinner! It’s easy to make and only requires a few simple ingredients.
To make this casserole, you’ll need:
8-10 corn tortillas
1 pound ground beef
1 can of black beans, drained and rinsed
1 can of corn, drained
1 jar of salsa
1 cup of shredded cheese
Preheat your oven to 350 degrees. In a large skillet, brown the ground beef over medium heat. Once it’s cooked through, add the black beans, corn, and salsa. Stir everything together and let it simmer for 5-10 minutes.
To assemble the casserole, start by spraying a 9×13 inch baking dish with cooking spray. Then, lay down 8-10 corn tortillas (depending on how big your dish is). Spread half of the beef mixture over the tortillas, then sprinkle on 1/2 cup of cheese. Add another layer of tortillas, then the rest of the beef mixture and cheese. Cover the dish with foil and bake for 25-30 minutes, or until the cheese is melted and bubbly
