2 tbsp oil 300 g chicken breasts 1 pk smaller leek 2 pk carrots 1 liter chicken broth 200 g arborio rice 1 tbsp butter 50 g g grated Parmesan 1/2 handful parsley to taste salt, ground black pepper

You’ll have a perfect creamy risotto ready in minutes. You only need 5 ingredients that you are guaranteed to have at home.

Heat the oil in a frying pan and add the diced chicken breasts.

Grill until they are browned. Season with salt and pepper and add chopped leeks and grated carrots.

Pour in the stock, cover and simmer for a few minutes.

Then add the rice to the breasts and simmer until tender, stirring occasionally and basting with the stock.
5.
Finally, soften the risotto with butter, stir in grated Parmesan cheese, chopped parsley and serve.
