In addition to the aromatic almonds, this crumbly cake uses two unusual ingredients – semolina flour and lard. Either way, it’s a great crunchy treat with a good cup of coffee.

Coarsely chop the almonds and reserve about a quarter of the whole almonds for the top of the cake.

In a large bowl, combine both flours, chopped almonds, sugar and lemon zest.

Add the cubed butter and weighed butter.

Work the flour with your fingertips and moisten the dough with the egg yolks.

Place this loose mixture in a greased and floured cake tin and bake at 180°C for approximately 40 minutes.

While still warm, serve the cake with coffee, but you can spice it up with a spoonful of freshly whipped cream or a scoop of vanilla ice cream.
