Carapanda

An old simple and tasty recipe for potato preparation from the Highlands. The dish is reminiscent of Swiss peasant pancakes rösti, which are made from both raw and boiled potatoes with the addition of egg and starch flour.

Ingredients:

1 kg of floury potatoes 3 dl milk fat pepper salt

Procedure:

1. Grate the potatoes on a grater into coarse noodles, salt and pepper them and pour boiling milk over them, stir and let them rest for 10 minutes
2. Melt the lard in a pan, scoop the mixture with a spoon, arrange in a thin layer and shape into patties, fry until golden on both sides
3. The patties were served alone with hot tea and sauerkraut.
