Caramel pancakes

Pancake batter
300 ml whole milk 2 eggs 12 tbsp plain flour special 00 2 tbsp granulated sugar / brown sugar a pinch of salt
Filling
200 g granulated sugar/brown sugar 120 g butter 20 ml water 140 ml whipping cream (33%, chilled)
Decoration
butter biscuits / bebe biscuits 100 g high quality milk chocolate 120 ml whipping cream (33%, chilled)

When you say – childhood, the first thing that comes to mind are pancakes. After all, who’s house didn’t have pancakes? For breakfast, lunch or as a sweet dessert in the form of pancake cake. When I was a kid, I often had a pancake cake on my birthday or name day and thus my love for pancakes has remained to this day. They are so simple yet so delicious. When I was little I liked them best with jam and cocoa, but now that I’m bigger I’ve decided to tweak them a bit.

Melt the sugar with a little water in a bowl. When the syrup is golden in colour, add the butter and let it melt. After a minute or so, add the cream carefully. Immediately set the caramel aside and let it cool.

For the pancakes, beat the eggs until light yellow. Whisk for about 2 minutes. Add the milk. Progressively add sugar,sifted flour and a pinch of salt. Heat a frying pan, pour in a certain amount of batter (according to the size of the pan and the size of the pancakes you want). Bake on each side for about a minute

Heat the whipping cream and pour over the chocolate. Whisk to combine

Place broken biscuits on top of pancakes, drizzle with caramel, swirl and top with more chocolate.
