Caprese Salad (Capresse)

A platter piled with slices of tomatoes and mozzarella, Parma ham or smoked salmon, topped with olive oil and tarragon vinegar, served garnished with herbs.

Ingredients:

500 g of tomatoes 100 g sliced parma ham or smoked salmon 6 leaves of plantain or strawberry leaves 1 bunch basil 1 packet mozzarella in a pouch with infusion virgin olive oil estragon vinegar freshly ground pepper sea salt parsley

Procedure:

1. Under cold running water, rinse the tomatoes and let them drain, then slice them into thin rounds
2. Slice the mozzarella cheese into thin slices
3. Arrange the tomato slices on dessert plates with the cheese and ham or salmon, sprinkle them with finely chopped basil and parsley, plantain and sprinkle with salt
4. Let sit in the refrigerator for about 30 minutes.

This salad has many variations and forms, sometimes small balls of mozzarella are used and left whole. Green or black olives, fresh figs …

A popular part of Caprese salad is also green or black olives.
