Calamari ripieni – stuffed octopus

ingredients

1 kg octopus carcass 2 pcs garlic cloves 4 pcs anchovy cut in oil 1 bunch parsley 1 pcs bun 4 tbsp olive oil 1 tbsp lemon juice to taste lemon slices for garnish, lettuce leaves, salt, ground pepper

procedure

1. Soak the potato in water. Squeeze out the potato and grind coarsely. Mix the potatoes, chopped octopus, sardines and sunchokes. Add garlic to the mixture. 2. Stir in 2 tbsp oil, lemon juice a little salt and pepper. Fill the octopus bodies with the mixture, close the opening with a toothpick. Brush the octopuses with oil, salt and pepper and place them on the grill. 3. Grill the octopus in the oven for 20 minutes. After 10 minutes, turn them over. Place on lettuce leaves and garnish with lemon slices.
