Calamari cream

ingredients

3 slices butter 1 pk onion 4 pk kohlrabi salt white ground pepper nutmeg (freshly grated) 500 ml homemade broth 250 ml sweet cream

Melt the butter in a saucepan and fry the finely chopped onion in it

Add the diced kohlrabi.

Salt, season with white pepper and grate nutmeg.

Roast and stir-fry for a few minutes.

Pour in the homemade stock and bring to the boil. Cook for 15 minutes or until the kohlrabi is tender.

Mix with a stick blender until smooth and add room temperature cream. Blend again.

7.

Bring to the boil and simmer for 4 more minutes.

Finish with salt, ground white pepper or nutmeg as needed.

Serving tip – kohlrabi noodles: melt the butter in a small saucepan and briefly fry the grated kohlrabi on a coarse grater (place in the centre of the cream soup).
