Cabbage Rolls with Dried Mushrooms

An old Czech recipe for using dried mushrooms. In the original recipe there were groats, which are replaced by buckwheat in this recipe. The rolls are additionally wrapped in English bacon.

Ingredients:

8 pcs of cauliflower leaves 3 pcs garlic scapes 1 pcs onions

200 g of cooked buckwheat 150 g of cooked buckwheat 150 g of cooked buckwheat English bacon 50 g of dried mushrooms 50 g of dried mushrooms 50 g of bacon Majorcan lard water quine pepper salt

Procedure:

  • Simmer the cabbage leaves briefly with boiling water, drain
  • Pre-soak the dried mushrooms and chop finely
  • .Fry chopped onion in lard, add bacon cubes, let them brown, add chopped mushrooms, season with salt, cumin, simmer until soft
  • Mix cooked buckwheat with mushrooms, season with grated garlic, marjoram, salt, pepper
  • Stir in the mushrooms./li>
  • Layer the kale leaves with the prepared mixture, roll up the rolls, bend the ends and wrap with slices of English bacon
  • Place the rolls in a baking dish, add a tablespoon of lard, pour a little water, salt and pepper the rolls on the surface, sprinkle with chopped onion, place in a preheated oven, bake at 180 °C for 25 minutes
  • Serve the hot rolls with, for example, boiled potatoes, topped with onion juice.
