Cabbage fritters: Fiber vegetable meatballs (not only) for vegetarians

1/2 pk medium cabbage (approx. 700 g) 2 pk onion 2 cloves garlic 2 handfuls parsley 2 pk egg 60 g breadcrumbs or coarse flour 1 KL salt 1 KL crushed cumin 1 KL sweet paprika 1/2 KL black pepper breadcrumbs or coarse flour for coating oil for frying

Perfect vegetarian snack with boiled potatoes, fresh salad or just with a tasty homemade dressing.

Cut the cabbage into thin slices and place in boiling water. Boil for about 8 to 10 minutes, drain through a sieve, squeeze out excess water with a spoon and let cool.

In the meantime, fry the chopped onion in about 2 tablespoons of oil until golden brown and add the crushed garlic about a minute before the end.

In a bowl, mix together the cabbage, sautéed onion and garlic, chopped parsley, eggs, breadcrumbs (or coarse flour), salt, crushed cumin, ground paprika and freshly ground or crushed black pepper. If the mixture seems too thin, add a tablespoon or two more of breadcrumbs or coarse flour.

Shape the mixture into fritters in moistened palms, coat lightly in breadcrumbs and fry in hot oil until golden brown on both sides.

Cabbage fritters are fantastic with a little sour cream and boiled potatoes.
