Bulgur risotto

1 cup bulgur 1 pk larger zucchini 1 pk eggplant 1 pk red onion 200 g mushrooms 1 pk coloured bell pepper 5 tbsp tomato puree olive oil salt black pepper hard cheese

Bulgur is a healthy food, especially known in the Mediterranean or in Turkey. It can be made into a tasty alternative to risotto, which is a great diet dish.

Wash and cut all the Vegetable Recipes into approximately equal smaller pieces.

Clean the onion and cut into medium sized pieces. Place them in a pan with olive oil and fry them until glassy.

Then add all the Vegetable Recipes to the larger pan. Stir everything together and progressively sauté until soft.

When the Vegetable Recipes are soft, add the bulgur to them. Salt and pepper everything well.

Add tomato puree or tomato sauce. Stir the risotto and simmer like this for a while. Then pour two cups of hot water over the dish. Stir it and cover it with a blanket. Allow the water to boil completely. If the bulgur is still very hard, add a little more water as you go along.

When all the water has evaporated, the bulgur risotto is ready. Serve it sprinkled with grated cheese.
