Buckwheat Kuba

Kuba prepared from buckwheat groats, dried mushrooms and spices, baked in the oven with cheese.

Ingredients:

300 g of buckwheat groats 200 g 100 g bacon 50 g dried mushrooms + water 40 g of lard 3 pcs red onions 3 pcs of garlic cloves 600 ml vegetable broth a handful of chopped parsley ground black pepper ground dried ginger dried marjoram ground cumin lard to grease the dish salt

Procedure:

1. Soak the dried mushrooms in cold water for 1 hour to swell, then drain and let them drain
2. Pour the boiling broth over the washed buckwheat groats, boil under a lid for 3 minutes, then remove the pot from the heat, wrap in a towel and leave the groats in the warmth for about 30 minutes to mature
3. In the meantime, in a frying pan, fry the peeled onions with bacon cut into small cubes in hot fat, add the mushrooms and simmer until tender, then stir in the buckwheat, heat everything through and season with salt, pepper, ground cumin, marjoram, ginger and peeled crushed garlic cloves
4. Finally, add finely chopped parsley and half of the grated cheese to the mixture, mix, spread into a greased baking dish, sprinkle with the remaining grated cheese, place in a preheated oven at 180 °C and bake for about 30 minutes.
