Bryndzovo-potato pancakes with onion

4 pcs potatoes boiled in skin 125 g bryndza 2 pcs spring onions 1 handful baby spinach 1 pcs egg to taste salt, ground black pepper 1 handful breadcrumbs a little butter and oil for frying

1. Let the potatoes cooked in their skins cool, peel them and mash them with a fork. Add the bryndza, chopped baby spinach and scallions. Stir in the egg, breadcrumbs and season the whole mixture with salt and pepper. Mix everything well so that the mixture is stiff enough. 2. Form the mixture into patties and fry on each side for about 3 minutes in hot butter and oil. Serve with sour milk or sour cream, for example.
