Brownie cake
ingredients
250 g quality dark chocolate 140 g butter 7 eggs 85 g granulated sugar 15 g cocoa salt cocoa powder for decoration

A cookie that disappears from the plate very quickly

Prepare a 26 cm cake tin which is well buttered. Melt the chocolate and butter in a water bath and leave to cool a little.

Separate the egg whites from the egg yolks. Add the sugar and a pinch of salt to the egg whites and whip the stiff cream. Lightly whisk the egg yolks with the cocoa. Add the chocolate and butter to the egg yolks. Make a stiff mixture,to which progressively add the egg whites. First add 1/3 of the snow to thin the mixture a little and then carefully work in the rest to keep the dough fluffy.

Pour into the tin and leave to bake for 25 minutes. The dough will rise at first and then fall and may crack, don’t worry 🙂 after baking the cake will be firm but still a little wet inside.

Coooled, sprinkle it with cocoa powder.
