Broumovské střapáčky with mushrooms

Cooked potato tassels mixed with fried mushrooms with onions and cracklings.
Ingredients:
Procedure:
1. Soak the dried mushrooms in a small amount of water the day before, let them recover and before starting to prepare the dough boil them for 30 minutes in the water in which they were standing, then drain them, let them drain and do not pour off the water, but put it aside
2. In a frying pan, fry the peeled onion finely chopped, add the drained mushrooms and fry everything, stirring occasionally, for about 30 minutes
3. In the meantime, finely grate the peeled potatoes into a bowl, add the eggs, a pinch of salt, gradually add the semi-coarse flour, stir and make a stiffer dough 4. Strain the dough through a colander with large round holes into a pot of boiling salted water and cook until the tassels float to the top, then drain and place in a bowl
5. Add the fried mushrooms and onions, the melted crackling, the ground pepper, stir, season everything with salt and finally stir in some of the water left from the cooked mushrooms.
