Broccoli cream with sour cream
ingredients
2 butter 1 pk onion 1 clove garlic 500 g broccoli 1 liter vegetable broth pk water 250 ml sour cream

Excellent refreshing soup.
1.
Melt butter in a saucepan and sauté finely chopped onion in it.

Add the smashed garlic and stir again.
3.
Add the broccoli florets to the base and stir.
4.
Spoon the vegetable broth over the top.
5.
If we have little broth add water, just enough to cover the broccoli.
6.
Bring to the boil and cook for 15 minutes.
7.
Add room temperature sour cream so it doesn’t curdle in the soup.
8.
Mix the soup until smooth and creamy.
9.
Serve drizzled with small scoops of cream.
