Original recipe from Slovakia for real škvarkové pagáče. It is a family recipe of the mother of an ice cream maker from Slovakia, a friend of ours selling ice cream in a stand at the Brno dam more than 20 years ago.
Ingredients:
500 g
of coarse flour
500 g
lard
20 g
of yeast
0.5 l
of milk

a little oil for the batter
a little sugar for the sourdough
Other:
baking paper, rolling pin, rolling pin
cumin, pepper, salt to sprinkle on the surface of the pagáče
Procedure:
Pour a little sugar into lukewarm milk, add crumbled yeast, let the leaven rise, add it to the flour, add oil, salt, make a dough as soft as for a classic pie, let it rise.
Roll out the risen dough on a floured work surface into a pancake about 1 cm thick, then rub it with finely minced cracklings, if they are a little salty, salt them.
Fold the dough as if you were making puff pastry, fold one half over the other, let it rise for 30 minutes, then roll out and fold the dough again, again let it rise for 30 minutes, repeat the process once more, then fold and roll out the dough again, but this time into a 2-3 cm thick pancake.
From the pancake cut out with a suitable cookie cutter circles, i.e. individual pagáče, put them on a baking sheet lined with baking paper.
Pagáče pomašlujeme (smear) with beaten egg, sprinkle with cumin, coarse salt, or paprika or pepper, put bake in the oven heated to 180-190 ° C for 15-20 minutes, ie nicely golden.
