Bobotie

The food of Malay immigrants, it is one of the oldest and most exquisite specialities in the South African Cape. Bobotie is a spicy mixture of spiced lamb, dried fruit and almonds baked under a layer of eggs and milk. Instead of lamb, you can use beef or salt cod.

Procedure:
1. Dry roast the cardamom and coriander in the oven and crush
2. Mix with the chopped onion, ginger and garlic and add the bay leaf, coriander, tandoori masala and dried fruit cut into pieces
3. Fry everything in oil, add the meat and fry
4. Add the stock in small batches and let it slowly boil and repeat until the meat is tender
5. Prepare the almond crust by mixing equal parts of almond flakes, egg and cream, season with salt and pepper and pour over the bobotie
6. Season with salt, transfer to a baking dish and bake with the almond crust in the oven at 180 °C
7. Finally, garnish the bobotie with bay leaves and dried apricots.
