Blueberry pie

The classic blueberry pie gets an epic twist when you add custard to the base.

Ingredients for six

Base

1 dl sugar 1 egg white 150g lightly salted butter 2-3 dl wheat flour;flour 0.5 dl rye flour 1 tsp baking powder

Vanilla sauce

2dl red milk 1.5dl icing sugar 3 tsp vanilla sugar (or vanilla pod) 1 tbsp potato flour or maize flour (or vanilla bean flour) 1 tbsp potato flour or maize flour

2dl red milk1 yolk

3-4 dl blueberries (frozen ones are also ok) 1 tbsp potato flour 2 tbsp sugar

1 tablespoon of sugarp>When the butter is soft enough to melt, whisk it into a light foam with sugar. Add the egg whites and whip.

Combine the dry ingredients first and knead the dough with the butter mixture. Add flour so that the dough comes away from your fingers. Spread evenly into the pie dish.

Whisk the milk and egg yolk in a saucepan and heat gently. When the sauce starts to bubble, remove it from the heat. Stir in the remaining ingredients and whisk well. It should be quite thick, add more potato flour if necessary. Pour the custard into the pie dish.

Combine the blueberries, potato flour and sugar. Spread the mixture over the custard.

Bake the blueberry pie, covered with foil, in a 200C oven for about 45 minutes. Allow to cool for a while and bake!
