Russian blini or pancakes are served with melted butter and caviar, thinly sliced smoked salmon or sour cream.

Procedure:
1. Stir the yeast in the warm milk, add the sugar and half of the sifted plain flour, stir and leave under a cloth in a warm place to rise for an hour
2. Then add the salt, 2 egg yolks, half of the melted butter, stir and let rise again under a napkin
3. Stir the stiff egg white snow into the risen dough and let rise for 15 minutes, then bake the pancakes on a greased pancake pan
