Black Forest Truffles | Chocolate Cherry Truffles

These Black Forest truffles are so good, you may ever want to have chocolate truffles again! The classic truffle twists combine chocolate with ripe dried cherries to form a decadent, ripe and thick truffle.
This recipe calls for kirschwasser or cherry juice, but if you prefer a more child-friendly treat, the alcohol can be eliminated. If you prefer, you can add vanilla extract, almond extract, or cherry flavored dash instead.
These candies, like most truffles, have several extensive cooling periods, so make sure you leave plenty of time when making them.
What you’ll need
9 ounces dark chocolate (finely chopped) 2/3 cup cream Optional: Things like red sprinkles, dried cherries, red crystallizing topping, etc
How to make it
1. Start by making the chocolate cherry flavour. First, put the chopped chocolate in a safe bowl over medium heat.
2. Pour the cream into a small sauce pan and place over medium heat. Heat the cream until small bubbles form on the sides of the pan, but don’t let it boil.
3. Pour the chocolate over the hot cream and let it sit for 1 minute. Gently rinse the chocolate and cream until well combined.
To use, stir in chopped cherries and kirschwasser.
4. Press the staple on top of the chocolate and let sit at room temperature. Place the truffle cream in the refrigerator to keep for about 2 hours.
5. Shaped truffles. Spoon 1-inch truffles onto a parchment-lined baking sheet. Alternatively, you can fill prepared baking sheets with a piping bag (½-inch round nozzle) and pipe a 1-inch pinecone.
6. Pour the cocoa powder into sheets of whipped paper or parchment. Wipe your hands with the cocoa and pull the truffle balls into balls. Refrigerate until about 1 hour.
7. Melt the chocolate chips in the microwave, stirring every 30 seconds to prevent overheating.
8. Rinse the truffles formed with the chocolate and transfer to a baking tray. While the chocolate is still wet, top each trifle with red sprinkles or dried cherries, if using. If you want a red top effect on the photo, melt some red crystallizing coating and place a paper cone or plastic bag with the corner cut out. Place the tube with the red coating on top of each truffle and let dry.
9. Refrigerate the truffles until fully set, about 15 minutes. For best flavor and texture, serve the black forest truffles at room temperature and store in an airtight container in the refrigerator for up to two weeks.
