Biftek Chalisko (BISTEC DE JALISCO)

A large slice of beef top sirloin, about 5-6 cm thick, grilled on an outdoor charcoal grill, served drizzled with orange juice.

Ingredients:

1-1.3 kg of beef tenderloin whole (piece about 5-6 cm thick) 1 piece of orange salt

Procedure:

1. Clean the meat and cut a grid across the surface with cuts about 1 cm deep and about 3 cm apart
2. Rub salt into the meat
3. Grill the steak whole, over charcoal for about 10 minutes on each side, if you want it to be bloody inside, or extend the grilling time if you like

Recommendation:

Serve the steak prepared in this way with tortillas, beans, rice or bread.
