Excellent refreshment for hot days from frozen fruit, with ice crumble and fragrant mint. Plus packed with antioxidants, fibre and no added sugar.
1.
Coarsely chop fresh mint, place it in a pitcher of cold water, add the juice of one lemon. Close and store in the fridge – ideally a couple of hours before making the slush.
2.
Place frozen berries in blender, sliced red melon.
3.
Depending on how thick you want it, add lemon-mint water and blend into a slush.
4.
Add ice cubes, gently blend to leave a texture with ice cubes.
5.
Transfer to glasses, garnish and serve with a straw.
6.
My tip: In addition to ice, I add frozen lemonade and herbs to the slush in larger ice cube trays. You can crush, but also let it melt slowly as a refreshing decoration.
7.
If you make more than you consume right away, simply transfer the slush to a freezer-safe bowl and pop it in the freezer – you won’t know when this goodness will come in handy. Remove from the freezer 20 minutes before serving to make it easier to scoop.
