Berliner Liver

Roasted liver served with fried onion rings and toasted apple slices.

Ingredients:

4 pcs (150 g each) calf liver slices 2 pcs large onions 2 pcs of sour apples 100 g of butter 3 tbsp smooth flour 1 tsp oil pinch of white pepper salt

Procedure:

1. Wash the liver, dry it, de-blanch it and coat it in plain flour
2. Remove the cores from the apples, cut them into 8 slices and fry them in a pan in 50 g of melted butter until light brown, then remove them and keep warm
3. Melt the remaining butter in another frying pan with oil and fry the liver slices in it for 3-4 minutes on each side, season with salt and pepper, spread out on heated plates, garnish with apple slices and onions.

Recommendation:

Serve with rice or potato croquettes and vegetable salad.
