Beetroot salad

ingredients

3 pcs beetroot 1,5 litres water

Salad dressing

300 ml water 2 tbsp apple cider vinegar 2 tbsp brown sugar 1 tsp salt 1 tsp whole cumin seeds 1 tsp fennel seeds

A very healthy salad, great as a side dish to a main meal.

Put washed beetroot in a pot of water to boil. Boil for about 1 – 1,5 hours until the beetroot is soft. Let cool and drain.

Meanwhile, prepare the vinaigrette – put water to boil in a small saucepan and add vinegar, sugar, salt, whole cumin seeds and fennel seeds. Bring to the boil and allow to dissolve. Remove and cool the vinaigrette.

Grate the cleaned beetroot on a grater and pour over the drained vinaigrette. Stir.

Place in the refrigerator for 2 hours and serve.
