1. Boil and slice the beets. Add thinly sliced radish, arugula and drizzle with olive oil. 2. Season with a little salt, add freshly ground black pepper and mix everything together. Finally, add the grated Parmesan cheese and sprinkle with crushed walnuts. Serve with wholemeal bread. 3. Tip: The beetroot can be cooked in advance and left in the fridge for several days.
