Beer Soup

A quite unusual soup made of beer and mineral water flavoured with nutmeg or mace, cream and egg yolks.

Ingredients:

Rule for 4 servings: 0.5 l fresh beer 0.5 l mineral water 4 tablespoons of cream 2 tsp butter 4 pcs egg yolks 150 g of second day bread nutmeg or flower salt

Procedure:

1. Bring mineral water with beer to a boil, collect the resulting foam
2. Add salt and season with nutmeg or mace
3. Then pour the whisked egg yolks in the cream into the soup and warm the soup but do not cook further!
4. Just before serving, top each portion with fried and diced bread, fried in butter.
