Beef Tartare with Toast

Some love it, others shun it. We’re talking beef tartare with toast. With this dish, it is more important than ever to buy only fresh ingredients and the highest possible quality. Only then can we indulge in this real delicacy with gusto. We recommend buying ingredients with quality logos such as Klasa, Regional Food or BIO. You will then be sure that you are buying quality food from proven suppliers, breeders and farmers.

Ingredients:

Number of servings: 4 servings 600 g of beef tenderloin/beef butt 4 pcs yolks 1 pc yellow onion 1 tsp non-spicy ground red pepper 1 tsp Worcestershire sauce 1 tsp mustard 1 tsp ketchup crushed cumin pepper salt Toppings: 12 pcs of bread 0.3 L of oil or lard

Procedure:

Clean the beef thoroughly, mince or shred finely with a knife, or blend.

Add finely chopped onion, egg yolks, mustard, Worcestershire sauce, ground paprika, ketchup, salt, pepper and ground cumin to the meat. Mix everything thoroughly and taste.

Place the beef tartare in the refrigerator for at least 30 minutes.

Tops:

Fry the bread slices in hot oil or lard until golden.

If you do not want to fry, you can dry fry the tops in a preheated oven. Preheat the oven to 200 °C and bake the toasts for about 8 minutes until golden.

Recommendation:

You can also add finely chopped pickles, capers or chilli to the beef tartare. For this recipe, there are no limits to the imagination. Many cooks state that the correct way to cook the meat is to scrape it. However, this is a bit laborious and so it is sufficient to grind or blend the meat. It is also possible to cut the meat into very small cubes (roughly 5 × 5 millimetres).
