(Beef) shoulder in the Bratislava style

1 kg beef (shoulder) 1 pk onion 50 g tomato puree 70 g carrot (cubes) 70 g celery (cubes) 40 g pickled cucumber (cubes) 40 g peas 500 ml milk 100 ml whipping cream 2 tbsp plain flour salt, black pepper ground oil

I’m sure you’re familiar with this recipe with pork shoulder, we prefer beef here. However, both taste delicious 😉

Wash the shoulder, clean it. If necessary, we can tighten it with string. After cooking, it will hold its shape. Fry it fiercely in oil on each side and take it out.

Add the chopped onion to the pot and fry. Add the puree, salt and pepper. Place the meat back into the stock, cover with water or stock. Simmer for approximately 2 hours.

When the meat is tender, remove it. Squeeze the juices into the fat, add the flour, stir and add the milk. Simmer for a while and strain through a thick sieve.

Add the carrot, celery and cucumber to the fine sauce. After cooking for a while, add the peas.

Finish the sauce with cream. Serve with pasta or dumplings.
