Beef leg with dill sauce

1.5 kg beef leg 2 Orava bacon 250 ml dry white wine 6 tbsp butter 2 tbsp plain flour 3 tbsp dill 1/2 pcs lemon 3 tbsp sour cream 150 ml whipping cream to taste vinegar, ground black pepper, salt, sugar

1. Heat the oven to 180°C. Wash and dry the meat and, using a sharp knife, make incisions in it. Place the bacon cut into strips, season with salt and pepper and place in a roasting tin. Top with 3 tablespoons of butter, white wine and place the baking dish in the preheated oven. Bake for 15 minutes. 2. Then reduce the oven temperature to 160°C and bake for another 90 minutes. Add a little water occasionally and baste the meat regularly with the stock. When the meat is done, let it rest in the oven for another 10 minutes. Remove and cover with foil. 3. Dilute the juices in the roasting tin with water to give a volume of about 250 ml. Heat the remaining butter in a frying pan, add the flour and fry for 2 minutes. Pour in the meat juices, stir the mixture well and cook for about 5 minutes. Season with grated lemon zest, chopped dill and cream. 4. Next, season with salt, ground black pepper or vinegar and sugar. Cut the meat into slices, serve with dumplings, sauce or hard-boiled egg.
