Beans and green mustard salad, fresh and different for summer

It is curious to note how, just by the way they are cut, green beans take on a whole new dimension. This bean salad shows another different way of eating green beans that will surprise and please many who thought it would not. Its preparation is tremendously simple because it is limited to a few ingredients that we usually have at the bottom of the fridge or pantry and it is also very quick, it is a simple and fresh choice for the summer that allows endless variations. For example, we could freely add some sautéed bacon or also some sardines or some feta cheese, the nuts could be cashews or pistachios and the vinaigrette could also contain lime, other spices or even curry powder.
Ingredients
Flat green beans,. 300 g Walnuts, 40 g Rolled raw almonds, 5 g Green mustard, 2 teaspoons Extra Virgin Olive Oil, 1 tablespoon + 1 tablespoon Soy sauce, 1 tablespoon Hot paprika, 1 pinch Apple cider vinegar, 1 teaspoon Honey, 1 teaspoon Salt and ground black pepper, c/s Step 1
Place a pot with plenty of salted water to boil. While it starts to boil peel the beans with the help of a peeler, removing all the strands from both sides so that later there are no hard and uncomfortable pieces to eat. Remove the ends of the beans and cut them in half. Once halved, gently and carefully julienne them as thinly as possible.
Step 2
Boil the sliced beans in strong boiling water for 3-5 minutes, until they change color and are tender, like spaghetti. Quickly strain and cool under cold running water or in an inverted water bath with ice.
Step 3
On the other hand, prepare the salad dressing by emulsifying the olive oil with the green mustard, soy sauce, honey and vinegar.
Step 4
If you want a stir-fry, we could sauté the beans in this step with a little olive oil over high heat and then proceed in the same way. Dress the beans generously with the vinaigrette, add salt and black pepper to taste and finish with the finely chopped walnuts and sliced almonds. Serve and add a little paprika on top.
Tricks and Tips
There is a gadget called a “bean cutter” that is sold online and peels the beans and slices them in a single pass. If there are many of you at home and you are going to make this dish assiduously it will help you a lot at work.
You can make the dish in a salad or sautéed version, depending on the time of year, and it is perfect to take in a bowl to the pool, beach or mountain.
