Bean salad with tuna and basil vinaigrette recipe

How many times do you think that on hot days when you start to feel hungry because it’s getting close to lunch or dinner time you wish you could snap your fingers and the food would appear ready to eat? You’re not the only one, we all have days when even choosing a restaurant to order food and wait for it to be delivered makes us lazy … but hunger is still there and we have to do something, such as this bean salad with tuna and basil vinaigrette.
Ingredients
For the bean salad
. Cooked canned beans, 250 g Sweet corn, 4 tablespoons Black olives, 8 Tuna in oil, 1 large oval can
For the basil vinaigrette
. Extra virgin olive oil, 3 tablespoons White vinegar, 1 tablespoon Dried basil, 1 teaspoon Salt
Step 1
We rinse the cooked canned beans, which although it is not essential, the liquid in which they come has a viscous texture that not everyone likes.
Step 2
In a bowl put the cooked and washed beans, the sliced black olives, the sweet corn and the drained and crumbled tuna.
Step 3
To dress our salad, put in a small bowl three tablespoons of extra virgin olive oil -if we have used a good canned tuna we can use the canned oil-, a tablespoon of white vinegar, a teaspoon of dried basil and salt to taste. Mix very well with the help of a fork until it emulsifies and pour over our salad. Mix well and serve immediately.

A salad with all kinds of nutrients in a single dish, as it provides fiber, carbohydrates, animal and vegetable proteins and heart-healthy fats. A quick, refreshing and economical dish perfect for everyday meals.
Although beans have a reputation for being indigestible, usually the heaviness produced by their consumption is due to the large amounts of fats with which they are accompanied in traditional recipes. Even so, they can be made even easier to digest if we add a few cumin grains to the vinaigrette.
