Ensalada de frijoles is the original name of a Mexican salad made of beans and other ingredients.
Ingredients:
Procedure:
1. Rinse and soak the beans in cold water for about 10 hours, they will increase in volume when soaked, so be sure to add enough water to keep them submerged
2. After swelling, drain the water, pour in new water (so that they are still submerged) and cook over a low heat until almost tender
3. Before boiling, add salt and boil briefly, then drain the beans and let them cool
4. Mix the beans with chopped celery, chopped onion, nuts and chopped cucumbers
5. Whisk the oil with vinegar, pepper and salt and pour this brine over the vegetable mixture, stir
6. Serve the salad after it has rested for a few hours or preferably the next day.
Recommendation:
Serve the bean salad on lettuce leaves or tossed with chopped lettuce leaves.
