Basque Cod

Roasted portions of cod, baked in the oven with mushrooms and tomatoes.

Ingredients:

Rule for 4 servings: 4 pcs portions of cod (fish fillets) 200 gtomatoes 150 g mushrooms 20 g butter 1/2 dl white wine 2 pcs boiled potatoes 1 pc garlic cloves 1 tbsp breadcrumbs ground sweet paprika ground pepper lemon juice smooth flour parsley oil salt

Procedure:

1. Sprinkle the cod (fish fillet) portions with lemon juice, season with salt, roll in plain flour and fry on both sides in heated oil
2. Grease a large dumpling mould with oil, arrange the slices of boiled potatoes on the bottom and place the fish portions on top
3. In the fat from roasting, sauté the steamed, peeled and sliced tomatoes, thinly sliced mushrooms, crushed garlic, chopped parsley
