Basil Soup with Cheese
Meat soup with cheese, English bacon, onion and wine.
Ingredients:
Procedure:
1. Make a light roux with butter and plain flour
2. Add finely chopped onion, bacon, fry, pour in lukewarm stock and whisk the soup with a whisk
3. Simmer the soup for 20 minutes, stirring occasionally, then puree or blend
