Basil Soup with Cheese

Meat soup with cheese, English bacon, onion and wine.

Ingredients:

Ingredients for 4 people: 50 g grated Parmesan cheese (Cheddar or Primator) 50 g 50 g butter 1 pk large onion 1 pc bacon slices 1,25 l of meat stock 1 dl red wine salt

Procedure:

1. Make a light roux with butter and plain flour
2. Add finely chopped onion, bacon, fry, pour in lukewarm stock and whisk the soup with a whisk
3. Simmer the soup for 20 minutes, stirring occasionally, then puree or blend
