Bao bun – basic recipe

ingredients

90 g butter 330 g milk 15 g dried yeast 720 g plain flour 70 g granulated sugar 4 g baking powder 4 g baking soda

Melt the butter with the milk,heat to 41 degrees (no more).

Add yeast and stir until dissolved. Put all dry ingredients in a mixer, mix using a hook.

Add the sourdough starter and shape the dough for about 5-7 minutes. Once the dough is formed, shape into a large ball (more smaller balls). Brush lightly with oil and leave to rise for 1 hour. The dough should rise at least 100%.

After rising, roll out to 0.5 cm thickness. Use a thin layer of oil instead of flour for rolling.

Cut out circles, fold them in half, place baking paper inside and let rise again (about 30 minutes). Steam for approximately 8 minutes. Fill the finished bun with meat, Vegetable Recipes, egg or any other filling and serve. Bon Appetit.
