Banana-apple bun

8 pcs old rolls cut into rounds 3 pcs banana 2 pcs apple 400 g low-fat cottage cheese – lumpy or lump. 1 pk vanilla sugar 1 pk cinnamon sugar 2 tbsp granulated sugar pk salt 1 pk egg yolk
Caramel milk:
100 g granulated sugar 200 ml 12% cooking cream 250 ml milk 2 tbsp water 2 pcs egg 1 pcs egg white

First, prepare the milk in which you will soak the buns.

Place 100g granulated sugar and 2 tbsp water in a saucepan. Stir and let the sugar dissolve over a low heat. After a while the sugar will start bubbling, stir now and then to keep it from burning and wait for the sugar to caramelize. It takes about 3-5 min.

When the sugar has caramelized, pour in the cream and milk. The caramel will congeal to a “stone” but don’t worry, it’s meant to be that way. Turn up the heat a little and stir. In a few minutes the caramel will dissolve. Once the caramel has melted, set everything aside and stir in the 2 eggs and egg white into the still warm mixture. Let it cool down a bit.

While the milk is cooling, prepare the fruit and curd filling. Slice the bananas and the apples into slices.

Place the cottage cheese in a bowl with the egg yolks. Add the vanilla sugar, 2 tbsp granulated sugar and a pinch of salt. Whisk well to combine and make a sweet custard.

Grease a baking tin and dust it with breadcrumbs.

Soak the rolls in the caramel milk and place them tightly next to each other in the bottom of the baking dish (you will use about 1/2 of the sliced pastry). Then layer the cottage cheese mixture on top of the rolls.

Place the apple slices on top of the cottage cheese mixture and sprinkle with cinnamon sugar (use 1/2 packet). Arrange the banana slices on top of the apples.

Next up are the remaining rolls. Dip the rounds of rolls in the milk again and place them close together. When you have everything nicely covered, dust the rolls with the remaining cinnamon sugar. The sugar will form a nice, crispy crust on top during baking.

Place the layered rolls in the oven and bake uncovered at 180 degrees for about 20-25 min. After removing from the oven, dust lightly with icing sugar. Enjoy!
