Balsamic reduction
This reduction of balsamic vinegar and sugar is used to flavour many dishes, not only Italian. Here we present two ways to prepare it.

Preparation I.:
1. Boil the sugar with the vinegar
2. After cooling, pour into a jar and refrigerate for future use
orPreparation II:
1. Caramelize the sugar in a pan
2. Pour in Balsamic vinegar and red wine
3. Cook until the mixture thickens.
Recommendation:
Reducing in the fridge will keep for up to 1 year!
