Baked Zucchini

A tasty recipe from Italian cuisine for the preparation of zucchini, which are baked in the oven together with tomatoes and other ingredients. Serve with bread and vegetable salad.

Ingredients:

2 pcs of smaller zucchini (200-300 g) 2 pcs garlic strips 1 pcs onions 400 g tomatoes (or 1 can 400 g sliced, peeled tomatoes) 100 g proscuitto (Italian bacon) 100 g sour cream 50 g parmesan 4 tbsp smooth flour olive oil oregano thyme pepper salt

Procedure:

  • Cut the courgettes lengthwise and season with salt, cut the tomatoes crosswise, scald with boiling water, peel, dice
  • Dry the courgettes and coat them in a batter of plain flour and cream
  • Spread the mixture with the tomatoes on a taller baking tray, place the coated courgettes
  • Place the tray in a preheated oven, bake for 20 minutes at 200 C until the courgettes are soft
  • Spread the zucchini in the oven./li>
  • Finish with grated parmesan cheese and leave to bake
  • Spoon the sauce over the warm courgettes on a plate, serve with bread or bread and vegetable salad.
