Baked tomatoes with eggs and garlic

Pulled tomatoes baked in the oven with an egg, served topped with a prepared sauce of onion, garlic and tomato insides.

Ingredients:

4 pcs of large tomatoes 4 pcs eggplant 2 pcs garlic cloves 1 pc onion 50 g butter salt

Procedure:

1. Wash the tomatoes, cut off the tops, scoop out the insides with a spoon and add salt
2. Peel and finely chop the onion, mince the peeled garlic
3. Fry the onion in 30 g of melted butter, add the hollowed out insides of the tomatoes, the crushed garlic and simmer over low heat until soft, finally add salt and sieve the mixture, you should get a thick tomato sauce
4. Then put the hollowed out tomatoes in a buttered baking dish, crack an egg into each of them and place the dish in a preheated oven at 200 °C, bake for 7-10 minutes
