Baked smoked knee

1 pk smoked knee 5 pk black pepper (balls) 5 pk allspice (balls) 2 pk bok choy 1 pk onion 1 KL salt
Marinade
2 tbsp oil 2 tbsp honey 1 tbsp soy sauce 1 tbsp mustard

A delicious delicacy that just about everyone in our country makes from time to time. For us, it’s about twice a year, so it’s rare for us, although we can often get a knee in a restaurant.
1.
Cut the knee lengthwise to the bone in three places, cover with water in a pot, bring to a boil, simmer for 10 minutes and drain.

Cover the knee again with water, add black and allspice, bay leaves, whole onion (in skin), salt and simmer covered for about an hour.

In the meantime, make the marinade for the rub: in a bowl, mix together the oil, liquid honey, mustard and soy sauce.

Heat the oven to 200°C.

Place the cooked knuckle in a baking dish, pour a little of the stock in which it was cooked and brush with about half of the marinade.

Bake in the oven (200°C) for about 40 minutes, basting the knee again with the marinade about halfway through baking.
7.
Serve the roasted, smoked knee with fresh bread and as a side dish we like mutton horns or horseradish.
