Baked rice with octopus and prawns, step by step recipe

To prepare this baked rice with octopus and prawns we are going to follow the basic rules for cooking the perfect rice, with a good sofrito and a broth that will have all the flavor of the prawns. Later we will finish this rice in the oven, to get a more uniform cooking and a more concentrated flavor.
Rice is probably my favorite food. And how grateful it is, more than one could be eating all week rice without getting tired of it.
It is a nutritious and very cheap product that serves as a wildcard to output everything we have in the pantry, whether Vegetable Recipes, any type of meat or a handful of clams or prawns, all mixed or separately can serve to make a piece of rice with little effort, in a jiffy and for very little money.
When it comes to making rice, my weakness is the octopus, an extraordinary and delicious product whose flavor and texture are phenomenal once incorporated into a rice dish. In this baked rice with octopus and prawns that we have just prepared its presence is decisive and allows us to enjoy a luxury product so that with a small amount we can prepare several servings.
Although during the step by step of this recipe I invite you to use a complex broth like the shrimp broth that I usually use as background for the fish soup that I like to prepare at home, of course you can use a common fish fumet prepared with bones and a little vegetable, although it is true that you will not get the intensity of flavor and color that brings the essence of seafood shells to our rice.
In any case, I always invite you to freeze the leftovers of stew sauces or other preparations such as fish soup to use them for future preparations. If you have listened to me and by chance you have a small tupper with leftover fish soup in the freezer, now is the time to use it. If we add fumet to this leftover fish soup until we get the amount needed to soak our rice, we already have a great broth with which to soak the rice and thus achieve a guaranteed success.
How to make baked rice with octopus and prawns
Ingredients
La Fallera Bomba rice, 170 g raw prawns, 12 cooked octopus, 150 g spring onion, 1 garlic clove, 2 red bell pepper, 1 green bell pepper, 1 choricero bell pepper pulp, 1 c. sop. (the flesh of two peppers) Crushed tomato, 125 ml Sweet paprika, 10 g Fish fumet or shrimp stock (2-2’5 times the amount of rice) Salt Extra virgin olive oil
01: We prepare the broth for the baked rice
As in this case we are interested in a broth with a lot of flavor and intensity, we have chosen to make a shrimp broth, the same broth that I usually use to prepare fish soup and that you can replicate by following the first two steps its recipe:
This broth we can prepare it perfectly with the heads and shells of the raw prawns themselves that we will use for this recipe, since we will add only the tail of the prawns already peeled.
02: Fry the Vegetable Recipes
Chop the garlic cloves, spring onion and peppers very finely. Add 4-5 tablespoons of extra virgin olive oil to the pan and add the chopped garlic. Once the garlic begins to sauté add the rest of the Vegetable Recipes and sauté over low heat for 15 minutes.
After sautéing the Vegetable Recipes well, add the paprika and cook briefly. Then, before the paprika burns, add the crushed tomato and mix. Reduce the tomato little by little until it concentrates with the sofrito.
03: Add the rice and the rest of the ingredients
We clean the chorizo peppers and put them in warm water to hydrate them for at least 30 minutes. Once hydrated, drain them and scrape the flesh with the help of a spoon. You can skip this process by using canned chorizo bell pepper pulp.
Once the tomato is reduced, add the chorizo bell pepper pulp and mix.
It’s time to add the cooked octopus to the base of our rice. You can cut it as thick as you like, although for this recipe I think it is more advisable to cut it into thin slices.
Incorporate the rice and sauté it for a few moments.
04: Cook our baked rice with prawns and octopus
Add the hot fish stock to the rice, mix well and salt. Once it starts to boil we cook over medium high heat and count 5 minutes.
We finish cooking the rice by introducing it into the oven previously preheated to 210º C and cook the rice in the oven for 10 more minutes. A couple of minutes before finishing cooking the baked rice with octopus and prawns, remove the rice from the oven and place the raw prawns on it in the most colorful way we can.
05: After resting for a few minutes, serve the baked rice with prawns and octopus
Remove the rice from the oven and let it rest for 5 to 10 minutes at room temperature to let it settle.
