Baked potatoes with Vegetable Recipes and cold cuts

This recipe was brought to our family by my aunt. Traditionally we make it with smoked sausage or smoked meat. But it also tastes great when you make it in a vegetarian version, adding smoked tofu and a boiled egg.

Clean the peanuts and cut them into thick slices. Let them simmer for just five minutes from boiling to keep them slightly hard. Then drain them immediately and leave to cool.

Trim all the other ingredients except the bacon into rings. The sausage should not be completely thin so that it does not bake and dry out.

Place the bacon slices on the bottom of the baking dish. You don’t need to drizzle them with oil anymore, because they will let enough juices out with the Vegetable Recipes and you won’t overcook the food.

Now start layering all the ingredients. First, spread the potatoes evenly on the baking sheet. Place the bacon, onions, peppers and tomatoes on top of those.

Finally, salt and pepper everything, add any dried herbs. Now sprinkle with grated smoked cheese.

Bake the pancakes in a preheated oven at 210 degrees for about 20 minutes. Since all the ingredients don’t need to bake for a long time, the dish is ready very quickly indeed. Serve with mixed vegetable salad.
