Baked potatoes with coconut topping

ingredients

500 g potatoes 200 g broccoli 200 g carrots 100 g leeks 2 tbsp coconut oil 200 g celery 3 dl water 1 tbsp curry spices 8 tbsp coconut milk 1 tbsp soy sauce hard cheese for sprinkling

procedure

1. 1. Boil the potatoes in salted water. 2. Meanwhile, fry leeks in coconut oil and add carrots, celery and broccoli. 3. Add water, curry spices and soy sauce. 4. Simmer for 5 minutes and add coconut milk and desiccated coconut. 5. Mash the cooked potatoes and add the vegetable mixture. 6. Season with chili sauce, transfer to a baking dish and bake at 200 degrees for 30 minutes.
