You can use any type of pasta you like for this recipe. I used shells, but penne or Rigatoni would work great as well.

The key to this dish is to get the balance of the cheese right. Too much and it will be overwhelming, too little and it won’t be cheesy enough. I used two cups of ricotta and two cups of mozzarella. You could also use cheddar cheese if you wanted to.

The eggs help to bind everything together and make it firm so that it doesn’t fall apart when you cut into it. I used four eggs for this recipe. You could use three if you wanted to, but I found that four worked best.

To make this dish, start by cooking the pasta according to the package directions. Drain it and then mix it with the ricotta cheese, eggs, and mozzarella cheese. Spread it into a baking dish and bake it at 350 degrees for 30 minutes. Once it’s out of the oven, let it cool for a few minutes so that you can cut into it.
