Baked Onion

Soup of onions, wine and eggs, baked with toasted bread and grated cheese.

Procedure:
1. In a saucepan in heated oil, fry the peeled, sliced onions
2. Pour in the wine and simmer the onions until the liquid is half cooked, then add the stock and bring to the boil
3. Cut out rounds of toasted bread (slightly smaller than the diameter of the bowl in which the soup will be baked), place on a baking tray and bake in a preheated oven at 200 °C until golden brown
5. Divide the soup into bowls, place the toasted bread on top, sprinkle with grated cheese, put in the oven and bake at 200 °C until the cheese melts and turns golden on the surface.
