Baked Killer Goulash

Goulash of pork meat, liver, kidneys, heart, spleen and brain stewed on lots of onions. Spiced and then baked in the oven.

Ingredients:

2,000 g of pork shoulder 1,000 g onion 500 g belly 300 g pork marrow 300 g of kidney 300 g spleen 300 g heart 300 g liver 1 l pork stock 1 pk pork tongue 1 pk garlic bulb Mayonnaise lard cumin cumin pepper salt

Procedure:

1. Cut the shoulder, belly, liver into 2 cm cubes, cut the spleen into strips
2. In a spacious pot, fry the onion in lard, add the meat, liver, salt and vinegar, pour in the broth and simmer under the lid, stirring occasionally, until semi-soft
5. Rinse the pork brains in a sieve with boiling water, remove the veins, blanks and bone remnants, rinse and mash with a fork in a bowl
7. Add the chopped tongue and heart to the meat in the pot, season to taste with marjoram, grated garlic, season with salt and pepper, and simmer for 5 minutes
8. Pour the goulash from the pot into a larger baking dish, mix with the whipped brain, cover the baking dish with a second baking dish or cover with foil and put in the oven for 20 minutes to bake
