Baked Fennel

A quick warm appetizer of fennel bulb, red onion and other ingredients served topped with grated parmesan cheese.

Ingredients:

2 pcs fennel bulbs 4 pcs small red onions

50 g parmesan 2 dl sweet cream 1 tbsp chopped capers 1 tbsp chopped parsley olive oil pepper salt

Procedure:

  • Clean the fennel bulbs, remove the stalks, cut in half and cut into wider noodles
  • Simmer the noodles briefly for 2-3 minutes in lightly salted water, drain, and let drain
  • .Grease a baking dish with olive oil, arrange the fennel noodles, red onion pieces, salt, pepper, sprinkle with chopped parsley and capers
  • Place in the preheated oven, bake for around 2-3 minutes, then baste with sweet cream, bake for a further 5 minutes
  • Remove from oven, sprinkle with parmesan cheese when warm and serve.
