Baked aubergines recipe

To Assemble

2 servings 1 pc red peppers 0,50 pc courgettes salt 3 pc tomatoes 1 tbsp olive oil 2 cloves of garlic basil 1 pc mozzarella 1 pc aubergine vegetable stock Pour over couscous. 1 cup couscous Crushed pepper 1 onion

Recipe preparation

1 Wash the aubergines, cut in half, scoop out the flesh (leaving about 1 cm from the edge), salt, pepper, rub with oil and bake in a 200 degree oven for 15 minutes. 2 Meanwhile, heat the olive oil in a frying pan, fry the diced onion, the peppers, the tomatoes, the garlic, the courgette, the peeled inside of the aubergine and fry.

TIP: How to peel garlic easily?

3 Cover the couscous with two cups of hot broth. 4 Fill the aubergines with the mixture, place the mozzarella slices on top and bake in a 180 degree oven for 15 minutes.
